It is called gingerbread because of the "ginger" spice that is used in making the cookies.  Gingerbread houses were first made in Germany.  The gingerbread house was popular after the fairy tale of Hansel and Gretel became well-known.  Gingerbread cookies were used to decorate the tree in the early days.  It was first published in 1848.
